Traditional manufacturing

Soléance is produced using the méthode traditionnelle —the bottle fermentation process that characterizes the world's great sparkling wines.

We work with 100% organically grown German Pinot Noir from a cool climate, ferment slowly, and allow the wines to mature on the lees for a long time. The result is structure, finesse, and depth—all naturally at 5% alcohol.

A Blanc de Noirs with a clear profile, elegant finesse, and a new lightness. Classically fermented in the bottle, made from 100% organically grown grapes from the winery's own vineyards, gently pressed, fermented at cool temperatures, and aged on the lees for a long time—like a traditional champagne, but with a modern interpretation.

The exclusive use of organic grapes, gentle processing, and traditional bottle fermentation result in a full-bodied, multi-layered flavor profile that one would hardly expect from a reduced 5% ABV. Ideal for those who want to combine enjoyment with clarity and style.
