Fully fermented base wines from classic grape varieties and recognized vineyards serve as the foundation. Wine that offers substance, structure, and provenance. Only what is intended to be sparkling wine can also convince as such.

Conscious reduction

After fermentation, some of the alcohol is carefully and precisely removed from the sparkling wine.

The goal is not abstinence, but balance: less alcohol while maximizing aroma, freshness, and structure.

The temperature control and gentle process ensure that the volatile aromas and flavors are preserved.

Traditional bottle fermentation

Production follows the traditional method.

The wine undergoes a second fermentation in the bottle—slowly, in a controlled manner, and over time—at least one year. This produces carbon dioxide, pressure, and the fine bubbles that characterize high-quality sparkling wine.

This artisanal phase has a decisive influence on texture, mouthfeel, and depth.

Flavor without compromise

The result is a sparkling wine with only around five percent alcohol—but with the structure, effervescence, and depth of a classic sparkling wine.
